Carrot cake recipe

Ingredients (24 cm molds)

Cake

300 grams of brown sugar, three eggs, 50 grams of potato starch, 1 tablespoon of cinnamon, 1/2 tablespoon of nutmeg, 300 grams of carrots, 75 grams of chopped almonds, and 25 grams of raisins are all ingredients (sultanas)

Cream Cheese Frosting

100 ml maple syrup, 250 gr. cream cheese, 25 gr. potato starch, 1/2 tsp. cinnamon, and 1 tsp. vanilla extract

Preparation

Step 1: Combine the flour, potato starch, yeast, baking soda, cinnamon, salt, and nutmeg in a basin.

Step 2: Combine 3 eggs, brown sugar, and another bowl. Beat the mixture until it starts to turn white.

3. Add the oil to the egg mixture and whisk it once more to incorporate it completely. Separate the mixture.

Step 4: Peel and wash the carrots, and make sure to completely dry them afterward. They should be grated and added to the mixture.

Step 5: Toss the dough with the nuts and sultanas. To prevent them from sticking to the bottom, flour them beforehand.

Step 6: Set up two 24 cm round molds that are lined with baking paper.

Step 7: Divide the dough between the two molds that were previously made.

Step 8: Bake for 40 minutes at 180°C in the oven. You can insert a knife or toothpick into the center to check that it is thoroughly done. It is cooked if the test results are clean.

Step 9: After the cakes are baked, remove them from the molds and allow them cool for 20 minutes so they may finish cooling.

10. To make the tops of the two cold cakes smooth, trim them with a broad serrated knife (less than 1 centimeter). We will be able to spread the icing more easily as a result.

Step 11. Add a thin layer of frosting and smooth it out with a rubber spatula.

For frosting

First, combine the cream cheese, potato starch, maple syrup, cinnamon, and vanilla extract in a bowl.

Step 2: Combine everything thoroughly by mixing.

Step 3: Allow it to rest in a cool location to reach the ideal consistency.

Chef's Tip: Muscovado sugar can be used in place of brown sugar. It will give the dish a little new flavor.
